Vinification: Grapes harvested and selected by hand at the beginning of October: Long maceration on the skins for about 12-15 days with selected yeasts at a controlled temperature of 24-26 ° in small steel tanks. Frequent pumping over and delestage.
Aging: The wine ages for about 1 year in large oak barrels of 20 HL. Aged for at least 6 months in bottle.
Organoleptic Notes: Intense ruby red colour with slight orange reflections. The nose is fragrant, with spicy and floral notes, hints of berries, currant and vanilla. The palate is well-structured, round and savory. Elegant and persistent aftertaste.
Pairings: The traditional austerity of the tannic texture of Tuscan Sangiovese goes very well with particularly tasty dishes, in particular juicy meats and strong aromas such as game and game. It also goes well with medium-matured cheeses.
