yeasts under controlled temperature. Natural malolactic fermentation
Aging: 18 months in medium toasted French barriques and further 6 months in bottle
Organoleptic notes: Deep ruby red, wide and intense bouquet with important notes of black currant, raspberry and blackberry follow eachother on an elegant and spicy
background at the end. A warm and round taste, with a long and pleasant aftertaste of soft tannins.
To serve with: Aged pecorino cheeses, roasted wildmeats and bistecca fiorentina.
Recommended temperature 18-20°.
